Brady’s Bomb Sweet Potato Hash Recipe

Thanks to my Dad’s example, I have become the self-proclaimed king of hash! LOL

Here is the recipe:

Avocado Oil (spray and liquid) from Chosen Foods https://amzn.to/3xEyIZA 

1 small organic sweet onion, chopped (throw away your plastic cutting boards and get bamboo https://amzn.to/3W5aIsK )

1 medium sized sweet potato, shredded (I use my Ninja https://amzn.to/3Umn6TL

1 package of Mulay’s Nana’s Original Italian Sausage (We bought this at Natural Grocers, or as Kim and I call it, The Natty)

18-24 Eggs (We prefer Vital Farms. They are truly pasture raised)

-Warm up your cast iron skillet with avocado oil (I cooked this in my favorite 17” massive 2 handle cast iron skillet from lodge: https://amzn.to/3UxFWYx)

-Add the onions and saute until fragrant. Add the sausage and brown.

-Remove the onions and sausage but leave the grease.

-Add the shredded sweet potato and cook like hash browns.

-Once the sweet potatoes are cooked to your liking, add back the onions and sausage. Allow the mixture to warm up and add the eggs. Scramble until done. Top with fresh avocado and commence snarffling. Yes. Snarffling is a word.
